Recipes

One of my goals for my 75 'n 930 days is to try 50 new recipes. I will be posting some of the favorites here to share with family and friends.  I will also include some old family favorites. Enjoy!!!

** I am changing the way this page will be so to make it easier to find recipes, as the way I had it, it was getting rather long to scroll through... I hope it is now easier for you to find them.

Recipe 4:
Caramelized Apples
Ingredients:
2 apples chopped up into bite size pieces
3 tablespoons butter
1/4 cup brown sugar
chopped walnuts (optional)
raisins (optional)

Directions:
*in frying pan melt butter
*add in brown sugar and stir until well combined
*add in walnuts and raisins (optional)
*add apples and mix until well coated
*let cook until apples are tender (easily pierced with a fork) and well coated in the brown sugar.
*Enjoy!!! Goes great with homemade fried chicken!!


Recipe 3:
Baked Fried Chicken
**I have never been that fond of fried foods. I would much rather eat baked. But who doesn't like fried chicken especially when it is homemade. I found this recipe and made a few changes to it for a baked chicken that is like a fried.. It is a family favorite**
Ingredients:
1 lb. Chicken Breasts (cut into small pieces)
milk or egg
flour
cornstarch
lemon pepper or chili pepper or other favorite meat seasoning
butter melted (about 1/4 cup)

Directions:
* mix together dry ingredients. (I never measure these ingredients. I just guesstimate how much to use, for the meat seasoning it depends on how much of the taste you want)
*soak chicken pieces in milk (can use egg also, slightly beat egg)
*take chicken out of milk and put in flower mixture until well coated
*place all chicken pieces in a glass backing dish
*poor melted butter over chicken
*bake at 450 for about 30 mins or until chicken is fully cooked through

Recipe 2:
Homemade Chicken Pot Pie!!!
Ingredients:
2 chicken breasts (cubed)
2 pie crusts (or a recipe for double pie crust)
Broccoli
Mushrooms
Carrots
Onions (optional)
Garlic salt (to taste)
2 cans Cream of Mushroom Soup (regular or w/ roasted garlic)
1/4 cup milk
1/2 cup mozzarella cheese

 Directions:
1. Preheat oven to 400 degrees
2. Cut chicken into bites sized cubes
3. Cut broccoli, carrots and mushrooms into bite size pieces
4. Cook cubed chicken completely through but not crispy
5. In small sauce pan, 1/3 filled with water, steam broccoli and carrots till can prick easily with fork but still a little crisp (do not overcook, do not want mushy veggies)
6. While chicken and veggies are cooking unroll 1st pie crust and place in bottom of pie pan.
7. Once broccoli and carrots are cooked, drain
8. When chicken in completely cooked through add 2 cans Cream of mushroom soup and milk and heat through.
9. Add mushrooms, broccoli and carrots to chicken mixture
10. Add cheese and stir together (mixture will be thick)
11. Pour chicken mixture into prepared pie pan
12. Unroll 2nd pie crust over top of pie. Sealing edges. And making slits in top crust.
13. Cook at 400 degrees for about 40 minutes or until pie crust is golden brown.
***Recommend placing pie on foil covered cookie sheet incase overflow occurs.





Recipe 1:

Homemade Pretzels

Ingredients

  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm water (100 degrees F/40 degrees C)
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon table salt
  • 1 1/4 cups all-purpose flour
  • 2 tablespoons baking soda
  • 2 tablespoons coarse salt

Directions

  1. Sprinkle the yeast over 1 cup of warm water in a bowl. The water should be no more than 100 degrees F (40 degrees C). Let stand for 10 minutes until the yeast softens and begins to form a creamy foam.
  2. Stir in 1 1/2 cups of flour, vegetable oil, and table salt, to make a thick, smooth batter. Stir in 1 1/4 cups of flour, and knead the dough on a well-floured surface until elastic, about 5 minutes. Form the dough into a ball, cover it with a cloth, and let it rest for 1 hour.
  3. Line a baking sheet with parchment paper.
  4. Cut the dough ball into 12 even pieces, and roll each out into a rope about 18 inches long and as thick as a pencil. To shape into pretzels, form a dough piece into a "U" shape, then cross the two tails to make a loop. Spread the two tail ends apart, bring them up, and press the ends into the top of the loop, to form the pretzel shape. Let the formed pretzels rest for 30 minutes on the prepared baking sheet.
  5. Preheat an oven to 475 degrees F (245 degrees C).
  6. Fill a large saucepan about half full of water, bring to a boil, and stir in the baking soda. Working one at a time, drop each pretzel into the boiling water, and let cook for 1 minute, to give the pretzel a skin. Place the boiled pretzels onto the prepared baking sheet, and sprinkle each one with coarse salt.
  7. Bake in the preheated oven until the pretzels are golden brown, about 12 minutes.
